Buttered Popcorn Ice Cream

  • 1 Tb. popping oil
  • 1/2 c. popcorn kernels
  • 1.5 c. heavy cream
  • 2.5 c. whole milk
  • 3/4 c. sugar
  • 1/4 tsp. salt
  • 1/2 tsp. butter flavor extract

Pop the popcorn with popping oil. Bring the cream and milk to a simmer and add the popcorn. Stir and allow to simmer for 10 minutes. Pass through a chinois. Add remaining ingredients and stir until dissolved. Chill thoroughly and freeze in an ice cream freezer. Transfer to a pre-frozen container. Place plastic on top of the ice cream and cover the container.
